- Peel and cut the carrots into 1-inch pieces. Chop the onion, mince the garlic, and peel and finely grate the fresh ginger.
- For deeper flavor, briefly sauté the onion, garlic, and ginger in a little oil before adding them to the slow cooker. This step is optional, but it brings out a savory aroma.
- Add the carrots, onion, garlic, ginger, kosher salt, black pepper, and optional cumin to a 5- to 6-quart slow cooker. Pour in 4 to 5 cups of vegetable broth, using just enough to nearly cover the vegetables.
- Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours. The carrots should be completely tender and easy to pierce with a fork.
- Purée the soup directly in the cooker with an immersion blender until smooth. Alternatively, blend carefully in batches in a countertop blender, leaving room for steam to escape.
- Stir in 1/2 to 1 cup of coconut milk or heavy cream during or after blending. Add lemon juice if desired, then taste and adjust the salt, pepper, ginger, or broth consistency before serving.
Notes
Add coconut milk, cream, and lemon juice after blending so their flavors stay fresh and easy to control. Refrigerate leftovers in a covered container and reheat gently, adding a splash of broth if the soup thickens.
