- Wash the apples thoroughly and pat them dry. Core each apple from the top, leaving the bottom intact so the filling stays inside during slow cooking.
- In a small bowl, mix the packed light brown sugar, ground cinnamon, ground nutmeg, and raisins until the spices are evenly distributed.
- Spoon the brown sugar mixture into the hollow center of each apple, pressing it in gently without splitting the fruit.
- Arrange the filled apples upright in the Crock-Pot. Pour the water around the apples, taking care not to pour it directly over the filling.
- Cover and cook on LOW for 3 to 4 hours, or on HIGH for about 2 hours. Begin checking toward the end of cooking when the apples can be pierced easily with a fork.
- When the apples are tender but still holding their shape, carefully transfer them to serving dishes. Spoon some of the cooking liquid over each apple and serve warm.
Notes
Use apples of similar size and firmness so they finish at approximately the same time. Do not overcook, because the apples can collapse and become applesauce. The brown sugar and raisins contribute most of the added Weight Watchers points, so the point value depends on the specific program and any substitutions.
