Crock Pot Loaded Baked Beans

These hearty slow-cooker baked beans are packed with bacon, ground beef, onion, and three kinds of beans in a sweet, tangy barbecue sauce. They make 10–12 generous servings and are ideal for gatherings.

Ingredients

  • 1 pound Bacon, diced
  • 1 pound Lean ground beef
  • 1 Medium yellow onion, chopped
Beans
  • 2 cans, 28 ounces each Pork and beans, undrained
  • 1 can, 15 ounces Kidney beans, drained and rinsed
  • 1 can, 15 ounces Butter beans or lima beans, drained and rinsed
Sauce
  • 1/2 cup Ketchup
  • 1/2 cup Prepared barbecue sauce
  • 1/2 cup Packed light brown sugar
  • 1/4 cup Molasses
  • 2 tablespoons Yellow mustard
  • 1 tablespoon Worcestershire sauce
Seasoning
  • 1/2 teaspoon Black pepper
  • As needed Salt

Method
 

Step-by-Step
  1. Dice the bacon and cook it in a large skillet over medium heat until browned and mostly crisp. Transfer the bacon to a paper-towel-lined plate, leaving about 1–2 tablespoons of bacon fat in the skillet.
  2. Add the lean ground beef and chopped yellow onion to the same skillet. Cook until the beef is browned and the onion is tender, breaking the beef into small crumbles, then drain the excess grease.
  3. Add the undrained pork and beans, drained and rinsed kidney beans, drained and rinsed butter or lima beans, cooked bacon, browned beef, and onion to a 5- to 6-quart slow cooker.
  4. Stir in the ketchup, barbecue sauce, packed light brown sugar, molasses, yellow mustard, Worcestershire sauce, and black pepper until the sauce is evenly distributed.
  5. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours. Stir once or twice if convenient, and cook until the beans are hot, thick, and glossy.
  6. Taste the finished beans before adding salt because the bacon and canned beans may already provide enough seasoning. If the sauce needs more thickness, let the beans stand uncovered for 10–15 minutes; if they become too thick, stir in a few tablespoons of water or additional barbecue sauce.

Notes

Brown the bacon, beef, and onion before slow cooking for better flavor and less grease. Store cooled leftovers in a covered container in the refrigerator and reheat gently until hot, adding a splash of water or barbecue sauce if needed.
