Crock-Pot Kielbasa in Tomato Sauce Made Easy

  • 1 lb (450 g) Smoked kielbasa, sliced into 1/2-inch rounds
  • 1 15 oz can (425 g) Tomato sauce
  • 1 14 1/2 oz can (411 g) Diced tomatoes, undrained
Vegetables and Seasoning
  • 1 medium Medium onion, chopped or sliced
  • 1 medium Green bell pepper, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried basil or Italian seasoning
  • 1/2 teaspoon Dried oregano
  • 1/4 teaspoon Black pepper
  • To taste Salt
Optional Addition
  • 1 tablespoon Tomato paste

Method
 

Step-by-Step
  1. Slice the kielbasa into 1/2-inch rounds. For better browning and a less-greasy sauce, optionally brown the slices in a skillet for 3–5 minutes, then drain.
  2. Add the tomato sauce, undrained diced tomatoes, onion, green bell pepper, garlic, dried basil or Italian seasoning, oregano, black pepper, and optional tomato paste to the slow cooker.
  3. Stir the sliced kielbasa into the tomato mixture until every piece is evenly coated.
  4. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until the vegetables are tender and the sauce is hot and flavorful.
  5. Taste the sauce before serving and add salt only if needed. Spoon the kielbasa and tomato sauce over rice, pasta, or mashed potatoes, or serve with crusty bread.

Notes

Kielbasa is already fully cooked, so the slow-cooking time is for tenderizing the vegetables and melding the flavors. Browning is optional but helps improve flavor and reduce grease. Refrigerate leftovers promptly in a covered container and reheat gently until hot.
