Crispy Smashed Potatoes With Feta and Herbs

Tender baby potatoes are smashed and roasted until deeply golden, then topped with feta, parsley, dill, and lemon. This crisp, creamy, herb-filled side dish serves 4.

Ingredients
  

Potatoes
  • 1 1/2 pounds Small Yukon Gold or baby red potatoes
  • 1 1/2 teaspoons Kosher salt, for cooking water
Roasting Mixture
  • 1/4 cup Extra-virgin olive oil
  • 2 cloves Garlic cloves, finely grated or minced
  • 1/2 teaspoon Freshly ground black pepper
Finishing
  • 4 ounces Feta cheese, crumbled
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Fresh dill, chopped
  • 1 tablespoon Lemon juice
  • 1 teaspoon Finely grated lemon zest
  • To taste Additional kosher salt

Method
 

Step-by-Step
  1. Heat the oven to 425°F. Line a large rimmed baking sheet with parchment, or lightly oil the sheet if preferred.
  2. Place the potatoes in a saucepan and cover them with cold water. Add 1 1/2 teaspoons kosher salt, bring the water to a boil, and cook for 15–20 minutes, until the potatoes are fork-tender.
  3. Drain the potatoes thoroughly and let them steam-dry for several minutes. This removes surface moisture and helps the potatoes brown rather than steam in the oven.
  4. Arrange the potatoes on the prepared baking sheet with space between them. Use the bottom of a glass or measuring cup to press each potato to about 1/2-inch thick without flattening it completely.
  5. Stir together the olive oil, garlic, and black pepper. Spoon or brush the mixture over the potatoes, coating their tops and the exposed pan around them.
  6. Roast for 25–35 minutes, turning once if necessary, until the edges are deeply golden and crisp. For additional browning, broil for 1–2 minutes at the end while watching closely.
  7. Sprinkle the hot potatoes with feta, parsley, dill, lemon juice, and lemon zest. Taste and add additional kosher salt if needed, then serve immediately.

Notes

Steam-dry the potatoes before smashing, leave room between them on the baking sheet, and add feta and fresh herbs after roasting so they stay fresh and do not burn. Use two baking sheets if the potatoes are crowded.
