Crispy Oven Baked Chicken Wings

These oven-baked chicken wings use a light baking powder coating and a high-heat rack-baking method to create crisp, golden skin without frying. Finish them with optional Buffalo sauce for a classic appetizer.

  • 4 pounds Chicken wings, split into flats and drumettes; tips removed
Seasoning Coating
  • 1 tablespoon Aluminum-free baking powder
  • 2 teaspoons Kosher salt
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1/2 teaspoon Freshly ground black pepper
Optional
  • 1 tablespoon Neutral oil, only if wings appear very dry
Optional Buffalo Sauce
  • 1/2 cup Hot pepper sauce, such as Frank’s RedHot
  • 4 tablespoons Unsalted butter, melted
  • 1 tablespoon Honey
  • 1/4 teaspoon Garlic powder

Method
 

Step-by-Step
  1. Pat the chicken wings thoroughly dry with paper towels. For the crispiest result, arrange them uncovered on a wire rack over a tray and refrigerate for at least 30 minutes, preferably overnight.
  2. Heat the oven to 425°F (220°C). Line a rimmed baking sheet with foil, place a wire rack on top, and lightly grease the rack.
  3. Whisk together the aluminum-free baking powder, kosher salt, garlic powder, paprika, and black pepper. Toss the dry wings thoroughly with this mixture; use the optional neutral oil only if the wings appear exceptionally dry.
  4. Arrange the coated wings in a single layer on the rack, placing them skin-side up where possible and leaving space between pieces.
  5. Bake for 25–30 minutes, turn the wings, and continue baking for 20–25 minutes. They are ready when deeply browned and crisp, and the thickest pieces reach at least 165°F (74°C).
  6. For Buffalo sauce, whisk the hot pepper sauce with melted butter and the optional honey and garlic powder. Toss the hot, crisp wings with the sauce immediately before serving.

Notes

Do not substitute baking soda for baking powder because it is much stronger and can create an unpleasant flavor. An uncovered overnight refrigerator rest produces the crispest skin. Keep sauce separate until serving when possible, and refrigerate leftovers promptly.
