- Heat 1 tablespoon neutral oil in a large skillet over medium-high heat. Add the ground pork and cook for 5–7 minutes, breaking it into small pieces, until no pink remains.
- Add the diced onion, minced garlic, and ginger to the skillet. Cook for 1–2 minutes, stirring often, until fragrant and the onion begins to soften.
- Stir in the coleslaw mix and stir-fry for 3–5 minutes, until the cabbage and carrot soften but still have a little texture. Avoid cooking the vegetables until mushy.
- Stir in the soy sauce, toasted sesame oil, optional rice vinegar, and black pepper. Cook for 1 additional minute, then remove the filling from the heat.
- Cool the filling for at least 10 minutes and drain away excess moisture. A wet filling can tear the wrappers or make them soft and gummy.
- Place one wrapper in a diamond position and add about 2–3 tablespoons of filling slightly below the center. Fold the bottom corner over the filling, fold in both side corners, then roll tightly toward the top corner.
- Brush the final corner with the beaten egg wash and press gently to seal. Continue with the remaining wrappers and filling, keeping the finished egg rolls covered so the wrappers do not dry out.
- Preheat the air fryer to 375°F (190°C), if your model requires preheating. Arrange the egg rolls seam-side down in a single layer with space between them, then lightly spray or brush the outsides with oil.
- Air-fry at 375°F for 8–12 minutes, turning halfway through, until the wrappers are crisp and golden brown. Cook in batches when needed, and serve hot with your favorite dipping sauce.
Notes
Cool and drain the filling before wrapping for the crispest results. Do not overcrowd the air fryer basket, and turn the egg rolls halfway through cooking for even browning. Refrigerate leftovers and reheat in the air fryer until hot and crisp.
