Crispy Garlic Parmesan Mashed Potato Cakes

Cold mashed potatoes are mixed with egg, Parmesan, garlic, herbs, and flour, then shaped and pan-fried until crisp and golden. This recipe makes about eight potato cakes and serves four as a side dish.

Ingredients
  

Potato Cake Mixture
  • 3 cups Cold prepared mashed potatoes
  • 1 Large egg
  • 1/2 cup Finely grated Parmesan cheese
  • 1/4 cup, plus more if needed All-purpose flour
  • 2 Garlic cloves, finely minced or grated
  • 2 tablespoons Fresh parsley or chives, chopped
  • 1/2 teaspoon, or to taste Kosher salt
  • 1/4 teaspoon Black pepper
Optional Coating
  • 1/2 cup Plain breadcrumbs
For Frying
  • 2 to 3 tablespoons Olive oil or neutral cooking oil

Method
 

Step-by-Step
  1. Place the cold mashed potatoes in a large bowl. Add the egg, Parmesan, flour, garlic, chopped herbs, salt, and black pepper, then mix just until the ingredients are evenly combined.
  2. Check the consistency before shaping. If the mixture is too soft or sticky to hold a patty shape, add breadcrumbs or another tablespoon of flour, using as little extra binder as possible so the cakes remain tender.
  3. Divide the mixture into 8 portions and shape each portion into a patty about 1/2 inch thick. For a more pronounced crust, lightly coat both sides of every patty with plain breadcrumbs.
  4. If the cakes feel delicate, place them in the refrigerator for 15 to 30 minutes. This optional chilling step helps them hold together and allows the outside to brown before the potato centers become too soft.
  5. Heat 2 to 3 tablespoons of oil in a large nonstick or cast-iron skillet over medium heat. Fry the cakes in batches, leaving space between them, for approximately 3 to 4 minutes per side, until deep golden brown and crisp.
  6. Transfer the finished potato cakes to a paper-towel-lined plate or wire rack. Serve hot with sour cream, crème fraîche, garlic aioli, chopped herbs, or your favorite egg and vegetable sides.

Notes

Use cold, fairly firm mashed potatoes, preferably without excessive milk or butter. Freshly grated Parmesan melts and browns well. Do not flip the cakes repeatedly; let the first side form a firm crust before turning.
