Crispy Fried Pork Wontons

Crisp, golden pork wontons filled with ginger, garlic, green onion, and classic Asian seasonings. They are perfect with a tangy soy-vinegar dipping sauce.

Ingredients
  

Wonton Filling and Wrappers
  • 1 pound (450 g) Ground pork
  • 40 wrappers Square wonton wrappers, thawed if frozen
  • 2 green onions Green onions, finely chopped
  • 2 cloves Garlic cloves, finely minced
  • 1 tablespoon Fresh ginger, finely grated
  • 2 tablespoons Light soy sauce
  • 1 tablespoon Oyster sauce
  • 1 tablespoon Shaoxing wine or dry sherry
  • 1 teaspoon Toasted sesame oil
  • 1 tablespoon Cornstarch
  • 1/4 teaspoon Ground white pepper
  • 1/2 cup Napa cabbage, finely minced
Frying and Sealing
  • 2-3 cups Neutral frying oil, such as canola or peanut oil
  • 2 tablespoons Water, for sealing wrappers
Dipping Sauce
  • 1/4 cup Soy sauce
  • 2 tablespoons Rice vinegar
  • 1 teaspoon Toasted sesame oil
  • 1 teaspoon Chili crisp or chili oil
  • 1 green onion Green onion, thinly sliced

Method
 

Step-by-Step
  1. Combine the ground pork, green onions, garlic, ginger, soy sauce, oyster sauce, Shaoxing wine or dry sherry, sesame oil, cornstarch, white pepper, and minced napa cabbage if using. Stir in one direction for 1 to 2 minutes until the mixture becomes slightly sticky and cohesive.
  2. Place approximately 1 teaspoon of filling in the center of each wrapper. Moisten the edges with water, fold into a triangle, press out air pockets, and seal firmly; bring the corners together for a traditional wonton shape if desired.
  3. Keep assembled wontons covered with a damp towel while you work. Heat 2 to 3 cups of neutral oil to 350 to 360°F (175 to 182°C).
  4. Fry the wontons in small batches for approximately 3 to 4 minutes, turning once or twice, until golden brown and fully cooked. Drain on a wire rack or paper towels, and confirm that the filling reaches 160°F (71°C) internally.
  5. Whisk together soy sauce, rice vinegar, sesame oil, chili crisp or chili oil if using, and sliced green onion. Serve the wontons hot with the dipping sauce.

Notes

Do not overfill the wrappers, keep unused skins covered, and remove air before sealing. Fry in small batches so the oil stays hot and the wontons do not become greasy. For cream-cheese wontons, replace the pork with 8 ounces (225 g) softened cream cheese, 2 finely sliced green onions, and 1/2 cup finely chopped crab or imitation crab; fry for about 2 to 3 minutes until crisp and golden.
