- Heat the oven to 425°F. Line a large baking sheet with parchment paper or lightly oil it.
- Remove damaged outer cabbage leaves, then cut the cabbage into 1-inch-thick wedges or slices. Keep some of the core attached so the pieces hold together.
- Arrange the cabbage in a single layer on the baking sheet. Brush or drizzle both sides with olive oil, then season with kosher salt, black pepper, garlic powder, and paprika.
- Roast for 20 to 25 minutes without disturbing the cabbage. Carefully turn the pieces and continue roasting for 5 to 10 minutes, until the edges are browned and crisp and the centers are tender.
- Finish with fresh lemon juice and grated Parmesan, if desired. Serve hot.
Notes
Do not overcrowd the baking sheet because excess moisture can steam the cabbage instead of crisping it. For extra browning, place the cabbage on a preheated baking sheet and use the oven's convection setting if available. Store leftovers covered in the refrigerator and reheat in a hot oven or air fryer.
