Crispy Baked Orange Chicken Wings

Crispy oven-baked chicken wings are coated in a glossy orange, soy, garlic, and ginger glaze. This appetizer serves about four people and is best enjoyed immediately while the crust is crisp.

Ingredients
  

Chicken Wings
  • 2 pounds (900 g) Chicken wings, split into flats and drumettes
  • 1 tablespoon Aluminum-free baking powder
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
Orange Sauce
  • 1 cup Fresh orange juice
  • 1 tablespoon Finely grated orange zest
  • 1/3 cup Low-sodium soy sauce
  • 1/4 cup Honey or packed light brown sugar
  • 2 tablespoons Rice vinegar
  • 3 cloves Garlic, finely minced
  • 1 tablespoon Fresh ginger, finely grated or minced
  • 1 teaspoon Toasted sesame oil
  • 1 tablespoon Cornstarch
  • 2 tablespoons Cold water
Optional Garnish
  • As needed Sliced green onions
  • As needed Sesame seeds
  • As needed Thin strips of orange zest
  • As needed Red-pepper flakes

Method
 

Step-by-Step
  1. Pat the chicken wings very dry with paper towels. For maximum crispness, arrange them uncovered on a wire rack in the refrigerator for at least 30 minutes or overnight.
  2. Heat the oven to 425°F (220°C). Line a rimmed baking sheet with foil, place a wire rack over it, and lightly grease the rack.
  3. Combine the baking powder, kosher salt, and black pepper in a small bowl. Toss the wings thoroughly with this mixture so every piece has a light, even coating.
  4. Arrange the wings in a single layer with space between each piece. Bake for 20–25 minutes, turn the wings, and bake for another 20–25 minutes until deeply browned and crisp; the thickest pieces must reach at least 165°F (74°C), though 175–185°F often gives wings a more tender texture.
  5. While the wings bake, combine the orange juice, orange zest, soy sauce, honey or brown sugar, rice vinegar, garlic, ginger, and sesame oil in a saucepan. Bring the mixture to a simmer and reduce it for about 5–7 minutes.
  6. Stir the cornstarch and cold water together until smooth. Whisk the slurry into the simmering sauce and cook for 1–2 minutes, until the glaze is glossy and thick enough to coat a spoon.
  7. Toss the hot, crisp wings with only enough sauce to coat them. Finish with green onions, sesame seeds, orange zest, or red-pepper flakes, and serve immediately.

Notes

Dry the wings thoroughly and do not substitute baking soda for baking powder. Sauce the wings immediately before serving because the orange glaze softens the crust over time; for maximum crunch, serve extra sauce on the side or broil sauced wings for 1–2 minutes while watching carefully.
