- Wash and thoroughly dry the zucchini. Slice into even rounds approximately 1/8 to 1/4 inch thick, remembering that thinner slices become crispier.
- Blot both sides of the zucchini slices with paper towels. Lightly season with salt, let them stand for 5-10 minutes, then blot again to remove released moisture.
- Whisk the egg and water together in one shallow bowl. In a second shallow bowl, combine the panko, Parmesan, Italian seasoning, garlic powder, kosher salt, and black pepper.
- Dip each zucchini slice into the egg mixture, allowing excess to drip away. Press it into the breadcrumb mixture so both sides are coated.
- Lightly spray the air-fryer basket with olive oil. Arrange the coated zucchini in a single layer without overlapping, working in batches if necessary.
- Air-fry at 400°F (200°C) for 5-7 minutes. Turn the slices, then cook for another 5-7 minutes, until the coating is golden brown and crisp.
- Serve the zucchini chips immediately. They naturally soften as they sit, so enjoy them while the coating is at its crunchiest.
