Crispy Air Fryer Potato Fritters

Thin grated-potato fritters cooked in the air fryer until crisp and golden. They are savory, tender inside, and delicious with sour cream, Greek yogurt, applesauce, or a garlic-herb dip.

  • 1 lb (450 g) Russet or Yukon Gold potatoes, peeled
  • 1/2 small Small yellow onion
  • 1 Large egg
  • 1/4 cup (30-32 g) All-purpose flour
  • 1/2 teaspoon, plus more if needed Fine salt
  • 1/4 teaspoon Black pepper
For Cooking
  • 1-2 teaspoons Cooking spray or neutral oil
Optional Add-Ins
  • 2 tablespoons Grated Parmesan
  • to taste Chopped parsley or chives
  • 1/4 teaspoon Garlic powder

Method
 

Step-by-Step
  1. Coarsely grate the peeled potatoes and onion. Place them in a clean kitchen towel or cheesecloth and squeeze very firmly over the sink until as much liquid as possible has been removed.
  2. Let the squeezed potato liquid stand for about one minute, then pour off the water and scrape the settled potato starch into the grated mixture. Stir in the egg, flour, salt, pepper, and any optional Parmesan, herbs, or garlic powder.
  3. Divide the mixture into 6–8 portions and shape each into a thin patty about 1/4 inch (6 mm) thick. Preheat the air fryer to 390–400°F (200°C) for 3–5 minutes.
  4. Lightly spray the air-fryer basket and the tops of the fritters. Arrange the patties in a single layer without crowding, working in batches if needed.
  5. Cook for 6–8 minutes, turn carefully, lightly spray the second side, and cook for another 6–8 minutes. Remove when both sides are golden and crisp, then serve immediately.

Notes

Thin patties crisp more effectively than thick ones. Do not overcrowd the air-fryer basket because trapped steam can soften the fritters. If cooking in batches, keep finished fritters warm on a rack in a low oven while the remaining batch cooks.
