Ingredients

Main Ingredients
  • 12 oysters Shucked oysters, drained and patted very dry
Breading
  • 1/2 cup All-purpose flour
  • 2 eggs Large eggs
  • 1 cup Panko breadcrumbs
Seasoning
  • 1 teaspoon Old Bay seasoning or Cajun seasoning
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Black pepper
  • 1/4 teaspoon Salt, optional
For Cooking and Serving
  • as needed Olive-oil or avocado-oil spray
  • as needed Lemon wedges
  • as needed Tartar sauce, remoulade, or cocktail sauce

Method

Step-by-Step
  1. Drain the oysters thoroughly and pat them exceptionally dry with paper towels. Set up shallow bowls for flour, beaten eggs, and seasoned panko.
  2. Coat each oyster in flour, then beaten egg, then the seasoned panko mixture. Press the crumbs gently onto each oyster so they adhere.
  3. Preheat the air fryer to 390°F (200°C) for about 3 minutes if your appliance requires preheating. Lightly spray the basket and arrange the breaded oysters in one layer.
  4. Lightly spray the tops with oil and air-fry for 6–9 minutes, turning halfway if needed, until golden and crisp. The oysters should be opaque, firm, hot in the center, and reach 145°F internally for food safety.
  5. Serve immediately with lemon wedges and your choice of tartar sauce, remoulade, or cocktail sauce.

Notes

Dry oysters very well before breading because excess liquid can make the coating slide off. Do not overcrowd the air-fryer basket. Cooking time varies by oyster size, starting temperature, and air-fryer model.
