- Scrub and thoroughly dry the potatoes, leaving the skins on. Place chopsticks or wooden spoon handles alongside each potato and cut thin slices about 1/8 inch apart, stopping 1/8 to 1/4 inch above the bottom.
- Pat the sliced potatoes dry again, then brush or toss them with olive oil. Season all over with kosher salt and black pepper, taking care to work a little oil between the slices.
- Preheat the air fryer to 380°F if your model requires preheating. Arrange the potatoes in a single layer with the cut sides facing up and cook for 20–25 minutes.
- Carefully fan the slices open slightly. Mix the melted butter with the garlic and optional rosemary or thyme, then brush the mixture over the potatoes and between the slices.
- Continue air-frying for 5–10 minutes, checking the thickest part with a skewer or knife. Sprinkle with Parmesan during the final 2–3 minutes if desired, then serve immediately.
Notes
Keep the potatoes in a single layer with space around them. Larger russet potatoes may need 35–40 minutes total, while small potatoes may finish in 20–25 minutes. Store leftovers refrigerated and reheat in the air fryer until hot and crisp.
