Crispy Air Fryer Eggplant

Tender eggplant rounds are coated in seasoned Parmesan panko and air fried until golden and crunchy. Serve them hot with marinara, ranch dressing, or garlic aioli.

Ingredients
  

Eggplant
  • 1 eggplant Medium globe eggplant, about 1 pound
  • 1 teaspoon Kosher salt, for drawing out moisture
Breading
  • 1/2 cup All-purpose flour
  • 2 eggs Large eggs
  • 1 tablespoon Water
  • 1 cup Panko breadcrumbs
  • 1/4 cup Finely grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Freshly ground black pepper
Finishing
  • 1 tablespoon Cooking spray or olive oil

Method
 

Step-by-Step
  1. Cut the eggplant into 1/2-inch rounds or sticks. Sprinkle both sides with kosher salt, place the pieces in a colander, and let them stand for 20–30 minutes if desired; pat them very dry with paper towels.
  2. Place the flour in one shallow bowl. In a second bowl, beat the eggs with the water, and in a third bowl combine the panko, Parmesan, Italian seasoning, garlic powder, and black pepper.
  3. Coat each eggplant piece in flour, dip it into the egg mixture, and press it firmly into the seasoned panko. Make sure the crumbs cover the surface so the crust cooks evenly.
  4. Preheat the air fryer to 380°F for about 3 minutes if your appliance requires preheating. Arrange the breaded eggplant in a single layer with space between the pieces, then lightly spray the tops with oil.
  5. Air fry at 380°F for 6–8 minutes. Turn the pieces, lightly spray the second side, and cook for another 6–8 minutes until golden brown and crisp.
  6. Transfer the eggplant to a serving plate and serve immediately with marinara sauce, ranch dressing, or garlic aioli. Cook additional batches as needed rather than crowding the basket.

Notes

Panko gives the crunchiest coating, so press it firmly onto the eggplant before cooking. A light oil spray helps the crumbs brown without making them greasy. Reheat leftovers at 375°F for 3–5 minutes to restore some crispness.
