Crispy Air Fryer Egg Rolls Recipe

These air fryer egg rolls are filled with seasoned ground pork and crunchy cabbage, then cooked until golden and crisp. They make 12 satisfying egg rolls with less oil than traditional deep-frying.

Ingredients
  

Egg Roll Filling
  • 1 tablespoon Neutral cooking oil, such as vegetable or canola oil
  • 1 pound Ground pork
  • 4 cups Bagged coleslaw mix, or approximately 3 cups shredded cabbage plus 1 cup shredded carrot
  • 2 cloves Garlic, minced
  • 1 teaspoon Freshly grated ginger
  • 2 tablespoons Low-sodium soy sauce
  • 1 teaspoon Toasted sesame oil
  • 2 green onions Green onions, thinly sliced
  • 1/4 teaspoon Ground black pepper
Assembly
  • 12 wrappers Egg roll wrappers
  • 1 tablespoon Water, for sealing wrappers
  • As needed Canola or avocado oil spray
Optional Dipping Sauce
  • As desired Sweet chili sauce, duck sauce, or a mixture of soy sauce and rice vinegar

Method
 

Step-by-Step
  1. Heat 1 tablespoon neutral cooking oil in a large skillet over medium-high heat. Add the ground pork and cook for approximately 5–7 minutes, breaking it into small pieces, until it is no longer pink.
  2. Add the minced garlic and ginger to the cooked pork. Stir and cook for about 30 seconds, just until fragrant.
  3. Stir in the coleslaw mix, soy sauce, toasted sesame oil, sliced green onions, and black pepper. Cook for 3–5 minutes, stirring frequently, until the cabbage begins to soften while retaining some texture.
  4. Transfer the filling to a bowl and cool it for at least 10 minutes. Drain away any excess moisture before rolling so the wrappers stay sturdy and crisp.
  5. Place approximately 1/4 cup of filling near the lower third of each wrapper. Fold the bottom corner over the filling, fold in both side corners, and roll tightly; moisten the top corner with water and press to seal.
  6. Preheat the air fryer to 375°F if the manufacturer recommends preheating. Arrange the egg rolls in a single layer with space between them, then lightly spray or brush the outside with oil.
  7. Air fry at 375°F for 8–12 minutes, turning halfway through and lightly spraying the second side with oil. Remove the egg rolls when the wrappers are golden brown and crisp, then serve immediately with dipping sauce.

Notes

Cool and drain the filling before rolling because excess moisture can cause soggy or split wrappers. Avoid overcrowding the air fryer basket and cook in batches when needed. At 400°F, some recipes use 8–10 minutes, but check early because the wrappers can brown quickly.
