Ingredients

Main Ingredients
  • 1 20-ounce can Pineapple chunks, drained very well
  • 8 slices Thin-cut bacon
  • 1/4 cup Packed light brown sugar
Optional Seasoning
  • 1/4 teaspoon Ground black pepper
Equipment
  • as needed Toothpicks

Method

Step-by-Step
  1. Drain the pineapple exceptionally well, then pat every piece dry with paper towels. Cut each bacon slice into three short pieces.
  2. Wrap one piece of bacon around each pineapple chunk, overlapping the ends slightly. Secure the overlap with a toothpick.
  3. Arrange the wrapped pieces in a single layer in the air-fryer basket with space between them. Sprinkle them with brown sugar or lightly roll them in the sugar, adding black pepper if desired.
  4. Air fry at 375°F (190°C) for 12 to 16 minutes, turning the pieces halfway through cooking. Continue until the bacon is browned and crisp, checking early because the sugar can darken quickly.
  5. Transfer the finished bites to a paper towel-lined plate and let them stand for 2 to 3 minutes. Remove the toothpicks if preferred, then serve warm.

Notes

Dry pineapple very thoroughly for the crispest bacon. Do not overcrowd the air-fryer basket; cook in batches when needed. A parchment liner designed for air fryers may be used, but it must not block all airflow. Fresh pineapple can replace canned pineapple, using about 3 cups of chunks.
