- Drain the pineapple exceptionally well, then pat every piece dry with paper towels. Cut each bacon slice into three short pieces.
- Wrap one piece of bacon around each pineapple chunk, overlapping the ends slightly. Secure the overlap with a toothpick.
- Arrange the wrapped pieces in a single layer in the air-fryer basket with space between them. Sprinkle them with brown sugar or lightly roll them in the sugar, adding black pepper if desired.
- Air fry at 375°F (190°C) for 12 to 16 minutes, turning the pieces halfway through cooking. Continue until the bacon is browned and crisp, checking early because the sugar can darken quickly.
- Transfer the finished bites to a paper towel-lined plate and let them stand for 2 to 3 minutes. Remove the toothpicks if preferred, then serve warm.
Notes
Dry pineapple very thoroughly for the crispest bacon. Do not overcrowd the air-fryer basket; cook in batches when needed. A parchment liner designed for air fryers may be used, but it must not block all airflow. Fresh pineapple can replace canned pineapple, using about 3 cups of chunks.
