  • 1 rack, 2 to 2 1/2 pounds Baby back pork ribs
Dry Rub
  • 2 tablespoons Packed light brown sugar
  • 1 tablespoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Ground black pepper
  • 1/4 teaspoon Cayenne pepper, optional
Finishing
  • 1/2 cup Barbecue sauce
  • 1 tablespoon Yellow mustard or olive oil, optional binder

Method
 

Step-by-Step
  1. Preheat the air fryer to 375 degrees F. Remove the thin membrane from the bone side of the ribs, pat the rack dry, and cut it into two or three sections so the pieces fit without being tightly folded.
  2. Combine the brown sugar, paprika, garlic powder, onion powder, kosher salt, black pepper, and optional cayenne pepper. Lightly coat the ribs with mustard or olive oil if desired, then rub the seasoning mixture over every surface.
  3. Place the rib sections meat-side down in the air-fryer basket. Cook at 375 degrees F for about 15 minutes.
  4. Turn the ribs over and cook for another 10 to 15 minutes, checking the smaller pieces early. The ribs should be deeply browned and tender before the sauce is added.
  5. Brush the ribs generously with barbecue sauce. Increase the air-fryer temperature to 400 degrees F and cook for 3 to 5 minutes, until the sauce is glossy and slightly caramelized.
  6. Rest the ribs for 5 minutes, then slice between the bones and serve warm. Thick or meaty racks may need 32 to 35 minutes of cooking before the saucing step.

Notes

For smaller racks, begin checking at 25 minutes. Add barbecue sauce only near the end because its sugars can burn if applied too early. Cook for tenderness rather than relying only on the minimum safe pork temperature; tender rib recipes commonly reach approximately 190 to 205 degrees F internally.
