- Preheat the air fryer to 400°F (200°C) for about 3 minutes, if preheating is recommended for your model.
- Cut the avocados in half, remove the pits, peel them, and slice each half into wedges about 1/2 inch thick.
- Place the flour in one shallow bowl. Beat the eggs in a second bowl, then combine the panko, paprika, garlic powder, kosher salt, and black pepper in a third bowl.
- Coat each avocado wedge in flour, dip it into the beaten egg, and press it into the seasoned panko until completely coated.
- Lightly spray the air-fryer basket with nonstick cooking spray. Arrange the avocado wedges in a single layer with space between them, working in batches if needed.
- Lightly spray the coated avocado pieces with cooking spray, then air-fry at 400°F for 8–10 minutes.
- Turn the fries carefully halfway through cooking so both sides brown evenly. Continue cooking until the panko is golden and crisp.
- Serve the avocado fries immediately with ranch dressing, chipotle mayo, lime crema, or another dipping sauce.
Notes
Firm-ripe avocados are easiest to slice and coat. Do not overcrowd the basket, because the wedges may steam instead of crisping. The avocado is already tender, so the goal is to brown and crisp the coating. For the best texture, serve immediately.
