Creamy White Chocolate Mini Cheesecakes

Small, rich cheesecakes made with a chocolate sandwich cookie crust and a smooth white chocolate filling. This recipe yields 12 muffin-size desserts and is best prepared a day ahead.

Ingredients
  

Chocolate Cookie Crust
  • 12 cookies, about 150 g Chocolate sandwich cookies, finely crushed
  • 4 tablespoons, 56 g Unsalted butter, melted
White Chocolate Cheesecake Filling
  • 8 ounces, 225 g Good-quality white chocolate, finely chopped
  • 24 ounces, 680 g Full-fat cream cheese, softened
  • 1/2 cup, 100 g Granulated sugar
  • 3 eggs Large eggs, room temperature
  • 1/2 cup, 120 g Sour cream
  • 1 teaspoon Pure vanilla extract
  • 1/8 teaspoon Fine salt

Method
 

Step-by-Step
  1. Heat the oven to 325°F (165°C) and line a 12-cup muffin pan with paper liners.
  2. Crush the chocolate sandwich cookies into fine crumbs, combine them with melted butter, and divide the mixture among the liners. Press about 1 tablespoon into each cup, bake for 5 minutes, and cool briefly.
  3. Melt the chopped white chocolate gently over barely simmering water or in short microwave intervals. Stir until smooth and let it cool until lukewarm.
  4. Beat the softened cream cheese and sugar on medium-low speed until smooth. Add the eggs one at a time, mixing only until incorporated, then mix in the sour cream, vanilla, and salt.
  5. Blend in the lukewarm white chocolate until the filling is smooth. Divide the batter among the crusts, filling each nearly to the top.
  6. Bake for approximately 18–22 minutes, until the edges are set but the centers still have a slight wobble. Cool in the pan, then refrigerate for at least 4 hours before removing the liners and serving.

Notes

Use real white chocolate made with cocoa butter rather than confectionery coating or white baking chips. Do not overbake; the centers should look slightly under-set and will firm as they chill. Overnight chilling is best.
