Sauce
  • 1 tablespoon Olive oil
  • 1 pound Lean ground beef
  • 1 Small yellow onion, finely diced
  • 2–3 Garlic cloves, minced
  • teaspoons Italian seasoning
  • ½ teaspoon Paprika
  • ¼ teaspoon Red pepper flakes, optional
  • 2 tablespoons All-purpose flour
  • 2 cups Beef broth
  • 15 ounces Tomato sauce
  • ½ cup Heavy cream
  • 1 cup Sharp cheddar cheese, shredded
Seasoning
  • ½ teaspoon Kosher salt
  • ¼ teaspoon Black pepper
Garnish
  • optional Chopped parsley or grated Parmesan

Method
 

Step-by-Step
  1. Bring a large pot of generously salted water to a boil. Cook the pasta according to the package directions until just al dente, reserve about ½ cup of pasta water, and drain.
  2. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it into small pieces, until browned; drain excess fat if needed.
  3. Add the diced onion and cook for 3–4 minutes until softened. Stir in the garlic, Italian seasoning, paprika, and optional red pepper flakes, then cook for about 30 seconds.
  4. Sprinkle the flour over the beef mixture and stir for 1 minute. Gradually pour in the beef broth while stirring, then add the tomato sauce, kosher salt, and black pepper.
  5. Bring the sauce to a gentle simmer and cook for 5–8 minutes, stirring occasionally, until it is slightly thickened. Reduce the heat to low before adding the cream.
  6. Stir in the heavy cream without allowing the sauce to boil vigorously. Add the cooked pasta and toss until coated, then stir in the cheddar cheese until melted.
  7. Add a splash of reserved pasta water if the sauce is too thick. Taste and adjust the seasoning, garnish with parsley or Parmesan, and serve hot.

Notes

Cook the pasta only to al dente because it continues softening in the hot sauce. Add the cream and cheddar over low heat to help prevent graininess or separation. Refrigerate leftovers in an airtight container for up to 3 days and reheat gently with a splash of broth, cream, or water.
