Creamy Tomatillo Avocado Ranch Dressing

  • 1 cup Mayonnaise
  • 1 cup Buttermilk
  • 1 packet, about 1 ounce or 28 g Dry ranch dressing mix

  • 2 Medium tomatillos, husks removed and rinsed
  • 1 Ripe avocado, peeled and pitted
  • 1/2 bunch Fresh cilantro, roughly chopped
  • 1 Fresh jalapeño, stem removed
  • 1 Garlic clove
  • 2 tablespoons, from 1 lime Fresh lime juice

Method
 

Step-by-Step
  1. Remove the papery husks from the tomatillos and rinse them well under cool water to remove the sticky coating.
  2. Add the mayonnaise, buttermilk, ranch seasoning, tomatillos, avocado, cilantro, jalapeño, garlic, and lime juice to a blender or food processor.
  3. Blend until the dressing is completely smooth and creamy, scraping down the sides as needed.
  4. Taste the dressing and adjust with additional lime juice, jalapeño, or buttermilk if desired.
  5. Refrigerate for 30 minutes to 1 hour before serving so the dressing thickens slightly and the flavors blend.

Notes

Use a fully ripe avocado for the smoothest texture. Remove the jalapeño seeds and inner membrane for less heat. If the dressing is too thick, blend in 1 to 2 tablespoons of additional buttermilk. The ranch seasoning provides most of the salt, so taste before adding any extra. Store airtight in the refrigerator and use within about 2 to 3 days.
