- Remove the papery husks from the tomatillos and rinse them well under cool water to remove the sticky coating.
- Add the mayonnaise, buttermilk, ranch seasoning, tomatillos, avocado, cilantro, jalapeño, garlic, and lime juice to a blender or food processor.
- Blend until the dressing is completely smooth and creamy, scraping down the sides as needed.
- Taste the dressing and adjust with additional lime juice, jalapeño, or buttermilk if desired.
- Refrigerate for 30 minutes to 1 hour before serving so the dressing thickens slightly and the flavors blend.
Notes
Use a fully ripe avocado for the smoothest texture. Remove the jalapeño seeds and inner membrane for less heat. If the dressing is too thick, blend in 1 to 2 tablespoons of additional buttermilk. The ranch seasoning provides most of the salt, so taste before adding any extra. Store airtight in the refrigerator and use within about 2 to 3 days.
