Small-serving creamy mint shakes made with vanilla ice cream, milk, Irish cream, and green food coloring. This recipe yields about six 2-ounce shooters and includes an easy nonalcoholic option.

Shake Base
  • 2 cups Vanilla ice cream, slightly softened
  • 1/2 cup Whole milk
  • 1/4 cup Irish cream liqueur, such as Baileys
  • 1/4 teaspoon Peppermint or mint extract
  • 4-6 drops Green food coloring
Toppings
  • As needed Whipped cream
  • 6 Maraschino cherries, optional
  • As needed Green or chocolate sprinkles, optional

Method
 

Step-by-Step
  1. Chill six small 2-ounce shot glasses in the freezer for about 10 minutes, if desired.
  2. Add the slightly softened vanilla ice cream, whole milk, Irish cream liqueur, mint extract, and green food coloring to a blender.
  3. Blend just until smooth and pourable, usually 15 to 30 seconds. Avoid over-blending so the shake stays thick.
  4. Taste the mixture and adjust the color or mint flavor if necessary, using care because mint extracts vary in strength.
  5. Pour the shake into the chilled glasses, dividing it evenly among the six shooters.
  6. Top each shooter with a small swirl of whipped cream and garnish with a cherry or sprinkles. Serve immediately.

Notes

For a nonalcoholic version, replace the Irish cream with an additional 1/4 cup milk. If using a particularly strong mint extract, start with 1/8 teaspoon and taste before adding more. If the mixture becomes difficult to pour, add milk by the tablespoon. These shooters are best served immediately.
