Step-by-Step
- Chill six small 2-ounce shot glasses in the freezer for about 10 minutes, if desired.
- Add the slightly softened vanilla ice cream, whole milk, Irish cream liqueur, mint extract, and green food coloring to a blender.
- Blend just until smooth and pourable, usually 15 to 30 seconds. Avoid over-blending so the shake stays thick.
- Taste the mixture and adjust the color or mint flavor if necessary, using care because mint extracts vary in strength.
- Pour the shake into the chilled glasses, dividing it evenly among the six shooters.
- Top each shooter with a small swirl of whipped cream and garnish with a cherry or sprinkles. Serve immediately.
Notes
For a nonalcoholic version, replace the Irish cream with an additional 1/4 cup milk. If using a particularly strong mint extract, start with 1/8 teaspoon and taste before adding more. If the mixture becomes difficult to pour, add milk by the tablespoon. These shooters are best served immediately.
