Creamy Ham and Peas Alfredo Pasta

Pasta and Sauce
  • 12 ounces Fettuccine, linguine, or penne
  • 2 tablespoons Butter
  • 2 cloves Garlic, minced
  • 8 ounces Cooked ham, diced
  • 1 cup Heavy cream
  • 1 cup Freshly grated Parmesan cheese
  • 1 cup Frozen green peas
Seasoning
  • 1/2 teaspoon Kosher salt, plus more for pasta water
  • 1/4 teaspoon Black pepper
  • 1/8 teaspoon Ground nutmeg, optional
Finishing
  • 1/2 to 1 cup Reserved pasta water
  • 2 tablespoons Fresh parsley, chopped, optional

Method
 

Step-by-Step
  1. Bring a large pot of well-salted water to a boil. Cook the pasta according to the package directions until al dente. Reserve at least 1/2 cup of pasta water, then drain.
  2. While the pasta cooks, melt the butter in a large skillet over medium heat. Add the diced ham and cook for 2 to 3 minutes, until heated through and lightly browned.
  3. Add the minced garlic and cook for about 30 seconds, just until fragrant. Pour in the heavy cream, bring it to a gentle simmer, and cook for 2 to 4 minutes without allowing it to boil vigorously.
  4. Stir in the frozen peas and heat for 1 to 2 minutes. Reduce the heat to low or remove the skillet from the burner, then add the Parmesan, salt, pepper, and optional nutmeg.
  5. Stir until the sauce is smooth, add the drained pasta, and toss to coat. Add reserved pasta water a tablespoon or two at a time until the sauce is creamy and clings to the pasta. Taste, adjust seasoning, and garnish with parsley and additional Parmesan if desired.

Notes

Freshly grated Parmesan melts more smoothly than pre-shredded cheese. Keep the cream at a gentle simmer and add the cheese off the heat or over very low heat to help prevent separation. Ham and Parmesan can both be salty, so taste the finished sauce before adding more salt.
