- Cook the gnocchi according to the package directions, usually in boiling salted water until the pieces float. Drain well and reserve a little cooking water.
- Melt the butter in a large skillet over medium heat. Add the garlic and cook for about 1 minute, stirring, until fragrant but not browned.
- Whisk in the flour and cook for about 1 minute to form a smooth roux. Gradually whisk in the milk and chicken broth.
- Add the thyme, basil, and oregano, then continue cooking and whisking for 1 to 2 minutes until the sauce begins to thicken. Season with kosher salt and freshly ground black pepper.
- Reduce the heat to low and stir in the Parmesan until melted and smooth, about 1 to 2 minutes. Do not boil the sauce after adding the cheese.
- Add the cooked gnocchi and gently toss until coated. Warm through briefly, garnish with parsley, and serve immediately.
Notes
Grate Parmesan from a wedge for the smoothest sauce. If the sauce becomes too thick, stir in 1 to 2 tablespoons of reserved gnocchi cooking water. Fresh gnocchi may cook faster than shelf-stable or frozen gnocchi, so follow the package directions.
