- Place the quartered red potatoes in a large saucepan and cover them with cold salted water.
- Bring the potatoes to a boil, then reduce the heat and simmer for 15–20 minutes, or until fork-tender. Drain them well.
- Melt the butter in a saucepan over medium heat. Whisk in the flour, salt, and black pepper, then cook for about 1 minute.
- Gradually whisk in the whole milk. Continue cooking and stirring for 4–6 minutes, until the sauce thickens.
- Remove the sauce from the heat and stir in the fresh dill. If using sour cream, allow the sauce to cool for 1–2 minutes before whisking it in.
- Add the drained potatoes to the sauce and gently toss until coated. Serve immediately with additional dill if desired.
Notes
Start the potatoes in cold, salted water for even cooking. Do not overcook them, or they may break apart when tossed with the sauce. Fresh dill provides the brightest flavor, but 1 tablespoon dried dill can be used instead. Yukon Gold potatoes are also a good substitute. For a fresh tang, add 1 teaspoon lemon juice or a small amount of grated lemon zest.
