- Heat the oven to 350°F. In a mixing bowl, beat or stir together the refried beans, softened cream cheese, sour cream, salsa, and taco seasoning until smooth and evenly combined.
- Stir in 1 cup of the shredded cheese. Spread the mixture into an 8-inch square baking dish or a similar 1 1/2- to 2-quart casserole dish.
- Sprinkle the remaining 1/2 cup cheese evenly over the top. Bake uncovered for 20–25 minutes, until hot throughout and bubbling around the edges.
- Let the dip rest for 5 minutes, then add sliced jalapeños, chopped green chiles, or sliced green onions if desired. Serve warm with tortilla chips.
Notes
Soften the cream cheese completely before mixing to prevent lumps. For a smoother dip, use a hand mixer; for more texture, stir by hand and choose chunky salsa. The dip can be assembled up to one day ahead and refrigerated, then baked for roughly 5–10 additional minutes directly from the refrigerator.
