Creamy, Cheesy Baked Ziti Everyone Will Love

A bubbling casserole of ziti, marinara, Italian sausage or ground beef, ricotta, sour cream, Parmesan, and mozzarella. It is creamy in the center, saucy throughout, and golden on top.

Ingredients
  

Pasta and Sauce
  • 1 pound Ziti or other tube-shaped pasta
  • 1 tablespoon Olive oil
  • 1 pound Italian sausage or ground beef, optional
  • 1 small Small yellow onion, finely chopped
  • 3 cloves Garlic, minced
  • 24 ounces Marinara sauce or tomato-basil pasta sauce
Cheese Filling
  • 15 ounces Whole-milk ricotta cheese
  • 1 large Large egg
  • 1/2 cup Grated Parmesan cheese
  • 1/2 cup Sour cream, optional
  • 2 cups Shredded mozzarella, divided
Seasonings
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Kosher salt, plus more for pasta water
  • 1/4 teaspoon Black pepper
Garnish
  • 2 tablespoons Fresh parsley or basil, chopped, optional

Method
 

Step-by-Step
  1. Heat the oven to 350°F and lightly grease a 9-by-13-inch baking dish.
  2. Bring a large pot of salted water to a boil. Cook the ziti for 1–2 minutes less than the package directions specify for al dente, then drain it well.
  3. Heat the olive oil in a large skillet. Cook the sausage or ground beef with the onion for about 6–8 minutes, until browned and fully cooked, then drain excess fat if needed.
  4. Add the garlic and cook for about 30 seconds. Stir in the marinara sauce and Italian seasoning, then simmer for 5 minutes.
  5. Mix the ricotta, egg, Parmesan, sour cream, salt, pepper, and half of the mozzarella in a bowl.
  6. Combine the drained pasta with about two-thirds of the meat sauce. Fold in the ricotta mixture gently so the pasta stays intact.
  7. Spread a little sauce in the baking dish, add half of the pasta mixture, and layer on some sauce and mozzarella. Add the remaining pasta, top with the remaining sauce, and finish with the remaining mozzarella.
  8. Cover the dish loosely with foil and bake for 20 minutes. Remove the foil and bake for another 10–15 minutes, until the casserole is bubbling and lightly browned.
  9. Let the baked ziti rest for 10 minutes before serving. Garnish with chopped parsley or basil if desired.

Notes

Slightly undercooked pasta prevents a soft or mushy casserole because the ziti continues cooking in the oven. For a meatless version, omit the sausage or beef and use 28 ounces of marinara sauce. Refrigerate leftovers and reheat covered until hot.
