Creamy Cheeseburger Soup

Ingredients
  

Soup Base
  • 1/2 pound Ground beef
  • 3/4 cup Finely chopped onion
  • 3/4 cup Shredded carrots
  • 3/4 cup Diced celery
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried parsley flakes
  • 3 tablespoons Butter, divided
  • 3 cups Chicken broth
  • 4 cups Peeled, cubed potatoes
Creamy Sauce
  • 1/4 cup All-purpose flour
  • 2 cups Whole milk
Seasoning and Finish
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Ground black pepper
  • 1 1/2 cups Cubed processed cheese, such as Velveeta
  • 1/4 cup Sour cream

Method
 

Step-by-Step
  1. Brown the ground beef in a large pot or Dutch oven, breaking it into small pieces. Drain excess fat, transfer the beef to a bowl, and set it aside.
  2. Melt 1 tablespoon of butter in the same pot. Add the onion, carrots, celery, basil, and parsley, then cook for 5–7 minutes, or until the vegetables begin to soften.
  3. Add the chicken broth, cubed potatoes, and browned beef to the pot. Bring the soup to a boil, reduce the heat, cover, and simmer for 10–12 minutes, until the potatoes are tender.
  4. In a separate saucepan, melt the remaining 2 tablespoons of butter. Whisk in the flour and cook for about 1 minute to make a smooth roux.
  5. Gradually whisk the milk into the roux. Cook, stirring frequently, for approximately 3–5 minutes, until the mixture thickens and reaches a gentle boil.
  6. Stir the thickened milk mixture into the soup. Add the salt and pepper, then simmer briefly until the soup is heated through.
  7. Reduce the heat to low and stir in the cubed processed cheese gradually. Continue stirring until the cheese melts completely and the soup is smooth.
  8. Remove the pot from the heat, or keep it on very low heat, and stir in the sour cream. Do not boil the soup after adding the sour cream.

Notes

Cut the potatoes into evenly sized cubes so they cook at the same rate. Add the cheese over low heat to help prevent a grainy texture. Refrigerate leftovers promptly and reheat gently without boiling.
