Creamy Cajun Chicken Pasta

Tender Cajun-seasoned chicken, colorful peppers, and pasta are tossed in a creamy garlic Parmesan sauce. This comforting dinner is ready in about 35–40 minutes.

Ingredients
  

Pasta and Chicken
  • 12 ounces Penne, fettuccine, or linguine
  • 1 pound Boneless, skinless chicken breasts, cut into thin strips
  • 2 tablespoons Cajun seasoning, divided
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
Sauce and Vegetables
  • 1 small Small yellow onion, finely diced
  • 1 pepper Red bell pepper, thinly sliced
  • 3 cloves Garlic, minced
  • 1 cup Low-sodium chicken broth
  • 1 1/2 cups Heavy cream
  • 3/4 cup Freshly grated Parmesan cheese
  • 1/2 teaspoon Smoked paprika, optional
Finishing
  • 2 tablespoons Fresh parsley, chopped
  • as needed Salt and freshly ground black pepper

Method
 

Step-by-Step
  1. Bring a large pot of salted water to a boil. Cook the pasta until just al dente according to the package directions, reserve about 1/2 cup of pasta water, and drain.
  2. Pat the chicken dry and season it with 1 tablespoon of Cajun seasoning. Heat the olive oil in a large skillet over medium-high heat.
  3. Cook the chicken for approximately 3–5 minutes per side, or until browned and cooked through. Transfer it to a plate as soon as it is done.
  4. Reduce the heat to medium and add the butter, onion, and red bell pepper. Cook for 3–5 minutes, until the vegetables begin to soften.
  5. Add the minced garlic and optional smoked paprika. Cook for about 30 seconds, just until fragrant.
  6. Pour in the chicken broth and scrape up the browned bits from the bottom of the skillet. Simmer for 1–2 minutes.
  7. Add the heavy cream and remaining Cajun seasoning. Simmer gently for 3–5 minutes, stirring occasionally, and avoid a vigorous boil.
  8. Stir in the freshly grated Parmesan and cook for 1–2 minutes, until the cheese melts and the sauce becomes slightly thicker.
  9. Return the chicken to the skillet and add the drained pasta. Toss everything until coated, adding reserved pasta water 1 tablespoon at a time if the sauce is too thick.
  10. Taste before adding salt because both Cajun seasoning and Parmesan may contain plenty of salt. Garnish with parsley and serve immediately.

Notes

Use freshly grated Parmesan for the smoothest sauce. Reserve pasta water to adjust the consistency, and remove the chicken from the skillet while making the sauce so it stays tender.
