Creamy Butternut Squash Soup

A silky soup made with tender butternut squash, aromatic onion and garlic, broth, herbs, a touch of honey or maple syrup, and heavy cream. It serves six and is ready in about one hour.

  • 2 tablespoons Unsalted butter
  • 1 large Large yellow onion, chopped
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
  • 1 large, about 3 pounds Large butternut squash, peeled, seeded, and cut into 1-inch cubes
  • 6 cups Chicken broth or vegetable broth
  • 2 tablespoons Honey or pure maple syrup
  • 1/2 teaspoon Dried thyme
  • 1/4 teaspoon Cayenne pepper, optional

  • 1/2 cup Heavy cream
  • To taste Additional salt and pepper

Method
 

Step-by-Step
  1. Melt the butter in a large Dutch oven or soup pot over medium heat. Add the chopped onion and cook for 5-7 minutes, until soft but not browned.
  2. Add the minced garlic, kosher salt, black pepper, dried thyme, and optional cayenne. Cook for about 30 seconds, stirring constantly, until fragrant.
  3. Add the cubed butternut squash, broth, and honey or maple syrup. Bring the mixture to a boil, then reduce the heat, partially cover the pot, and simmer for 20-25 minutes until the squash is very tender.
  4. Purée the soup until smooth with an immersion blender. If using a countertop blender, work in batches, never fill it more than halfway, and vent the lid to release steam.
  5. Stir in the heavy cream and warm gently for 2-3 minutes without boiling. Taste and adjust the salt, pepper, sweetness, and cayenne before serving hot.

Notes

For deeper flavor, roast the peeled squash with oil at 425°F (220°C) for about 30-40 minutes before adding it to the soup base. For an especially smooth texture, blend thoroughly and pass the soup through a fine-mesh strainer before adding the cream.
