- Heat the oven to 350°F (175°C), and lightly grease a small 1 1/2- to 2-quart baking dish.
- In a mixing bowl, stir the softened cream cheese, Buffalo-style hot sauce, and ranch or blue cheese dressing until mostly smooth.
- Fold in the shredded chicken, about 3/4 cup of the cheddar, and the blue cheese if using.
- Spread the mixture evenly in the prepared baking dish and sprinkle the remaining cheddar over the top.
- Bake uncovered for 20–25 minutes, until the dip is hot, bubbling around the edges, and fully melted on top.
- Rest the dip for about 5 minutes, then garnish with green onions or additional blue cheese and serve hot with your favorite dippers.
Notes
Soften the cream cheese before mixing to prevent lumps. For the best texture, use freshly cooked or rotisserie chicken and shred it finely. If the mixture seems too thick, stir in 1–2 tablespoons of ranch dressing or milk before baking. Refrigerate leftovers promptly and reheat gently until hot.
