Copycat Wingstop Garlic Parmesan Wings

Crispy oven-baked chicken wings are tossed in a warm garlic Parmesan butter sauce for a restaurant-style appetizer at home.

Chicken Wings
  • 2 lb Chicken wings, split into flats and drumettes
  • 1 tablespoon Baking powder
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
Garlic Parmesan Sauce
  • 1/2 cup Unsalted butter
  • 2 tablespoons Fresh garlic, finely minced
  • 1/2 teaspoon, or to taste Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
  • 1/2 cup Finely grated Parmesan cheese
  • 2 tablespoons, optional Fresh parsley, finely chopped

Method
 

Step-by-Step
  1. Pat the wings thoroughly dry with paper towels. For the best texture, arrange them uncovered on a rack in the refrigerator for at least 30 minutes or overnight.
  2. Heat the oven to 400°F. Toss the wings with baking powder, kosher salt, and black pepper, then arrange them in one layer on a wire rack set over a foil-lined baking sheet.
  3. Bake for 40–45 minutes, turning the wings once, until browned, crisp, and cooked through. The internal temperature must reach at least 165°F; wings are often especially tender at 175–185°F.
  4. While the wings bake, melt the butter in a small saucepan over medium-low heat. Add the minced garlic and cook for 1–2 minutes, just until fragrant, taking care not to brown it.
  5. Stir the kosher salt, black pepper, finely grated Parmesan, and parsley into the warm butter. Remove the sauce from the heat.
  6. Toss the hot wings with the garlic Parmesan sauce immediately before serving. Finish with a little extra finely grated Parmesan and parsley if desired.

Notes

Use baking powder, not baking soda, and measure it carefully because too much can leave a bitter, chalky flavor. Finely grated Parmesan coats the wings more evenly than large shreds. For an alternative method, deep-fry seasoned wings at 350°F for approximately 8–10 minutes, drain well, and toss with sauce; a second 1–2 minute fry can add extra crispness.
