Frozen banana rounds dipped in a smooth semisweet or dark chocolate shell make a simple, freezer-friendly treat inspired by Trader Joe's Gone Bananas. A little refined coconut oil helps the chocolate coat the fruit thinly and set firmly.

  • 3 medium Ripe but still firm medium bananas
  • 1 cup (170 g/6 oz) Semisweet or dark chocolate chips
  • 1 tablespoon (14 g) Refined coconut oil
Optional Toppings
  • 1/8 teaspoon Flaky sea salt
  • as desired Finely chopped nuts

Method
 

Step-by-Step
  1. Line a baking sheet or plate with parchment paper. Peel the bananas and cut them into rounds approximately 1/2 inch thick, then arrange the slices in a single layer.
  2. Freeze the banana slices for 1–2 hours, until firm. Melt the chocolate chips and refined coconut oil together in the microwave in 20–30-second intervals, stirring after each interval, until smooth; a double boiler may also be used.
  3. Dip each frozen banana slice into the melted chocolate, coating it completely or about two-thirds of the way. Lift each piece with a fork and allow excess chocolate to drip off before returning it to the parchment.
  4. Add flaky sea salt or finely chopped nuts immediately, before the chocolate sets. Freeze the coated bites for another 20–30 minutes, until the shell is firm.
  5. Transfer the finished bites to an airtight freezer container, separating layers with parchment paper. Store for up to about 1 month.

Notes

Use bananas that are sweet but still firm enough to slice cleanly. Refined coconut oil is best when you do not want a noticeable coconut flavor. Keep the bites frozen for the firmest texture.
