Copycat Popeyes Red Beans and Rice

A quick canned-bean copycat with creamy puréed red beans, whole beans, gentle spices, and a mild smoky finish served over fluffy white rice.

Ingredients
  

Red Beans
  • 2 15-ounce cans Small red beans or red kidney beans, drained
  • 1/4 cup Water
  • 1/4 cup Lard or bacon drippings
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon Granulated sugar
  • 1/4 teaspoon Paprika
  • 1/4 teaspoon Garlic powder
  • 1/4 teaspoon Onion powder
  • 1/4 teaspoon Ground black pepper
  • 1/4 teaspoon Cayenne pepper
  • 1/2 teaspoon Hot sauce
  • 1/4 teaspoon Liquid smoke
Rice
  • 1 cup Long-grain white rice
  • 1 1/2 cups Water
  • 1/2 teaspoon Salt

Method
 

Step-by-Step
  1. Rinse the rice, then combine it with 1 1/2 cups water and 1/2 teaspoon salt in a saucepan. Bring to a boil, cover, reduce the heat to low, and cook for about 15 minutes; remove from the heat and let it stand, covered, for 5 minutes before fluffing with a fork.
  2. Drain the beans, reserving a little bean liquid if desired. Place one can in a blender or food processor with 1/4 cup water and pulse until mostly smooth.
  3. Add the puréed beans, the second can of whole beans, lard or bacon drippings, salt, sugar, paprika, garlic powder, onion powder, black pepper, cayenne, hot sauce, and liquid smoke to a saucepan.
  4. Stir well and simmer over low heat for 20 to 25 minutes, stirring occasionally. Mash a few whole beans against the side of the pan if you prefer a thicker consistency, and do not let the mixture boil hard.
  5. Taste the beans and adjust the salt, hot sauce, or consistency as needed. Spoon the creamy red beans over or beside the hot white rice and serve immediately.

Notes

Puréeing one can is the important texture trick. Liquid smoke is concentrated, so keep it to 1/4 teaspoon. Bacon drippings may replace lard for a stronger smoky flavor. Refrigerate leftovers in an airtight container and reheat gently with a splash of water.
