Light, airy cloud bread made with whipped egg whites, cream cheese, and cream of tartar. These soft rounds are simple to prepare and make a useful low-carb alternative to regular bread.

  • 3 large Large eggs, separated
  • 3 tablespoons (45 g) Full-fat cream cheese, softened
  • 1/8-1/4 teaspoon Cream of tartar

Method
 

Step-by-Step
  1. Heat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Beat the egg yolks with softened cream cheese until smooth. Mix in the salt if making a savory version.
  3. In a completely clean bowl, beat the egg whites with cream of tartar until stiff, glossy peaks form.
  4. Fold about one-third of the whipped egg whites into the yolk mixture, then fold in the remaining whites in two additions.
  5. Spoon the batter into 6–8 rounded mounds on the prepared baking sheet, keeping each one approximately 1/2–3/4 inch thick.
  6. Bake for 25–30 minutes, until puffed and lightly golden. Cool for several minutes before removing the rounds from the parchment.

Notes

Use room-temperature eggs and a grease-free bowl for the best volume. Fold gently rather than stirring, and do not make the rounds too thin. Cloud bread deflates somewhat as it cools, which is normal.
