- Heat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Beat the egg yolks with softened cream cheese until smooth. Mix in the salt if making a savory version.
- In a completely clean bowl, beat the egg whites with cream of tartar until stiff, glossy peaks form.
- Fold about one-third of the whipped egg whites into the yolk mixture, then fold in the remaining whites in two additions.
- Spoon the batter into 6–8 rounded mounds on the prepared baking sheet, keeping each one approximately 1/2–3/4 inch thick.
- Bake for 25–30 minutes, until puffed and lightly golden. Cool for several minutes before removing the rounds from the parchment.
Notes
Use room-temperature eggs and a grease-free bowl for the best volume. Fold gently rather than stirring, and do not make the rounds too thin. Cloud bread deflates somewhat as it cools, which is normal.
