Total Time 2 minutes
Servings: 12 servings

Ingredients

Main Ingredients
  • 10 ounces Frozen chopped spinach, thawed
  • 1 cup Sour cream
  • 1 cup Mayonnaise
  • 1 package, about 1.4 ounces Knorr Vegetable Recipe Mix
  • 8 ounces Canned water chestnuts, drained and finely chopped
  • 3 green onions Green onions, thinly sliced

Method

Step-by-Step
  1. Thaw the frozen chopped spinach completely. Place it in a clean kitchen towel or fine-mesh strainer and squeeze firmly until as much liquid as possible has been removed.
  2. In a medium mixing bowl, combine the sour cream, mayonnaise, and Knorr Vegetable Recipe Mix. Stir until the soup mix is distributed evenly through the creamy base.
  3. Add the squeezed spinach, chopped water chestnuts, and sliced green onions. Stir thoroughly until the vegetables are evenly mixed throughout the dip.
  4. Cover the bowl and refrigerate the dip for at least 2 hours. If possible, chill it overnight so the dried soup mix hydrates and the flavors blend fully.
  5. Stir the dip once more before serving. Spoon it into a serving bowl and offer it cold with crackers, pita chips, raw vegetables, or bread cubes.

Notes

Squeezing the thawed spinach thoroughly is the most important step for a thick, scoopable dip. Overnight refrigeration is recommended when you have time because the texture and flavor improve as the mixture rests.
