Cinnamon Sugar Mini Pumpkin Muffins

Soft, warmly spiced mini pumpkin muffins are baked until tender and coated with buttery cinnamon sugar while still warm. This recipe makes approximately 36 irresistible bite-size muffins.

  • 1 3/4 cups (219 g) All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground ginger
  • 1/4 teaspoon Ground nutmeg
  • 1/2 cup (120 ml) Neutral vegetable oil
  • 1/2 cup (100 g) Granulated sugar
  • 1/2 cup (100 g) Packed light brown sugar
  • 2 eggs Large eggs, room temperature
  • 1 cup (227 g) Pumpkin purée, not pumpkin pie filling
  • 1 teaspoon Vanilla extract
  • 1/4 cup (60 ml) Milk
Cinnamon-Sugar Topping
  • 1/4 cup (50 g) Granulated sugar
  • 1 teaspoon Ground cinnamon
  • 2 tablespoons (28 g) Unsalted butter, melted

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease a mini-muffin pan or line it with mini paper liners.
  2. Whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg in a medium bowl.
  3. In a separate bowl, whisk the oil, granulated sugar, brown sugar, room-temperature eggs, pumpkin purée, vanilla, and milk until smooth.
  4. Add the dry ingredients to the pumpkin mixture and stir just until no dry streaks remain. Do not overmix.
  5. Fill each mini-muffin cup about three-quarters full.
  6. Bake for 11–14 minutes, or until the tops spring back lightly and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Cool the muffins in the pan for about 5 minutes, then transfer them to a wire rack.
  8. Mix the topping sugar and cinnamon. Brush or lightly dip the tops of the warm muffins in melted butter, then coat with the cinnamon sugar.

Notes

Measure flour by weight or spoon it into measuring cups and level it. A few small lumps are preferable to overmixing, and the cinnamon-sugar topping should be added while the muffins are still warm so it adheres properly.
