- Heat the oven to 350°F and line a 12-cup muffin pan with paper liners. Mix the crushed pretzels, brown sugar, and melted butter, then place about 2 tablespoons in each liner and press lightly into an even layer.
- Whisk the flour, cocoa powder, sugar, baking soda, baking powder, and salt in one bowl. In another bowl, whisk the egg, buttermilk, oil, and vanilla, then stir the wet mixture into the dry ingredients just until combined.
- Slowly whisk in the hot coffee or hot water; the batter will be fairly thin. Divide it among the liners, filling each about two-thirds full, and bake for 18–22 minutes, until a toothpick comes out with a few moist crumbs.
- Cool the cupcakes in the pan for about 5 minutes before transferring them to a rack. Let them cool completely before frosting.
- Beat the softened butter until smooth, then gradually add the confectioners’ sugar and cocoa powder. Mix in the cream, vanilla, and salt, and beat for 2–3 minutes until light and fluffy, adding a little more cream if needed.
- Melt the chopped chocolate gently in a microwave in 20–30-second intervals, stirring between intervals, or use a double boiler. Dip the pretzels partway into the chocolate and place them on parchment to set.
- Pipe or spread the buttercream over the completely cooled cupcakes. Top each cupcake with a chocolate-covered pretzel and sprinkle with crushed pretzels if desired.
Notes
Use hot coffee for a stronger cocoa flavor, or substitute hot water. Avoid overmixing the cupcake batter, use softened rather than melted butter for the frosting, and press the pretzel crust lightly so it does not become hard. Store finished cupcakes covered at room temperature for a short serving period or refrigerate if needed; allow chilled buttercream to soften before serving.
