- Drain and rinse the chickpeas thoroughly. Pat them dry if they seem particularly wet.
- Add the chickpeas, nut butter, brown sugar, quick oats, vanilla extract, and baking soda to a food processor. Process until completely smooth, stopping to scrape down the sides as needed.
- If the mixture is too thick, add milk of choice one tablespoon at a time and process again until the dip reaches a creamy, scoopable consistency.
- Taste the blended dip and adjust the sweetness or vanilla to your preference.
- Fold in the chocolate chips by hand so they remain whole and provide chocolatey bites throughout the dip.
- Serve immediately, or refrigerate for 30 minutes if you prefer a firmer, more cookie-dough-like texture.
Notes
For the smoothest dip, use well-rinsed chickpeas and process for several minutes. Removing the chickpea skins is optional but can create a silkier texture. Mini chocolate chips distribute especially well.
