  • 1 1/2 cups Cooked chickpeas, drained and rinsed
  • 1/4 cup Smooth peanut butter, almond butter, or another nut or seed butter
  • 1/3 cup Packed brown sugar
  • 1/4 cup Quick oats
  • 2 teaspoons Pure vanilla extract
  • 1/8 teaspoon Baking soda
  • 1/2 cup Semisweet or dark chocolate chips
Optional Ingredient
  • 1-2 tablespoons Milk of choice, only as needed

Method
 

Step-by-Step
  1. Drain and rinse the chickpeas thoroughly. Pat them dry if they seem particularly wet.
  2. Add the chickpeas, nut butter, brown sugar, quick oats, vanilla extract, and baking soda to a food processor. Process until completely smooth, stopping to scrape down the sides as needed.
  3. If the mixture is too thick, add milk of choice one tablespoon at a time and process again until the dip reaches a creamy, scoopable consistency.
  4. Taste the blended dip and adjust the sweetness or vanilla to your preference.
  5. Fold in the chocolate chips by hand so they remain whole and provide chocolatey bites throughout the dip.
  6. Serve immediately, or refrigerate for 30 minutes if you prefer a firmer, more cookie-dough-like texture.

Notes

For the smoothest dip, use well-rinsed chickpeas and process for several minutes. Removing the chickpea skins is optional but can create a silkier texture. Mini chocolate chips distribute especially well.
