Chicken Francese: A Simple Recipe for Crispy, Lemon-Butter Flavor

Chicken Francese

Thin chicken cutlets are coated in flour and egg, pan-fried until golden, and served with a glossy lemon-butter sauce made from white wine, broth, and fresh lemon juice.

Ingredients
  

Chicken and Coating
  • 4 halves Boneless, skinless chicken-breast halves, about 6–8 ounces each
  • 1 teaspoon Kosher salt, divided
  • 1/2 teaspoon Freshly ground black pepper
  • 1/2 cup All-purpose flour
  • 3 eggs Large eggs
  • 1 tablespoon Water
For Cooking
  • 1/4 cup Olive oil, plus more if needed
  • 4 tablespoons Unsalted butter, divided
Lemon-Butter Sauce
  • 1/2 cup Dry white wine
  • 1 cup Low-sodium chicken broth
  • 3 tablespoons Fresh lemon juice, from 1–2 lemons
Garnish
  • 1 lemon Lemon, thinly sliced or cut into wedges
  • 2 tablespoons Fresh parsley, chopped

Method
 

Step-by-Step
  1. Slice the chicken breasts horizontally into thinner cutlets if needed. Place the cutlets between sheets of plastic wrap and pound them to about 1/4-inch thickness, then season with the salt and black pepper.
  2. Place the flour in one shallow dish. In a second shallow dish, whisk the eggs with the water until evenly combined.
  3. Dredge each cutlet lightly in flour, shaking off the excess, and then coat it in the egg mixture.
  4. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium to medium-high heat.
  5. Cook the chicken in batches, without crowding the skillet, for about 2–3 minutes per side until golden brown and cooked through. Transfer the cooked cutlets to a plate.
  6. Pour off excess fat if necessary while leaving the browned bits in the skillet. Add the white wine, scrape up the fond, and simmer for 1–2 minutes to reduce slightly.
  7. Add the chicken broth and lemon juice. Simmer for about 3–5 minutes, until the sauce is lightly reduced.
  8. Lower the heat and whisk in the remaining 3 tablespoons of butter until the sauce is glossy. Return the chicken to the skillet briefly to warm it and coat it with sauce.
  9. Garnish with chopped parsley and lemon slices or wedges. Serve immediately.

Notes

Pound the chicken evenly and cook in batches so the coating browns instead of steaming. Add the final butter over reduced heat and avoid vigorously boiling the finished sauce. Refrigerate leftovers in a covered container and gently reheat them with a little broth or water.
