Chewy Pumpkin Swirl Brownies

A chewy cocoa brownie base is layered with a creamy pumpkin-spice swirl for a rich, festive autumn dessert. This recipe makes about 24 brownies in a 9 x 13-inch pan.

Brownie Batter
  • 1 cup (226 g) Unsalted butter, melted and slightly cooled
  • 2 cups (400 g) Granulated sugar
  • 4 Large eggs
  • 2 teaspoons Vanilla extract
  • 1 1/2 cups (190 g) All-purpose flour
  • 3/4 cup (65–75 g) Unsweetened natural cocoa powder
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
Pumpkin Swirl
  • 8 ounces (226 g) Cream cheese, softened
  • 1/2 cup (120 g) Pure pumpkin purée
  • 1/4 cup (50 g) Granulated sugar
  • 1 Large egg yolk
  • 1 teaspoon Pumpkin-pie spice
  • 1/2 teaspoon Vanilla extract

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Line a 9 x 13-inch metal baking pan with parchment paper, leaving an overhang on the long sides, and lightly grease the parchment.
  2. Whisk the melted, slightly cooled butter and sugar together. Add the eggs and vanilla, then whisk until the mixture is smooth.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Stir the dry mixture into the butter mixture just until no dry streaks remain.
  4. Beat the softened cream cheese with the sugar until smooth. Mix in the pumpkin purée, egg yolk, pumpkin-pie spice, and vanilla.
  5. Spread about two-thirds of the brownie batter into the prepared pan. Spoon the pumpkin mixture over the brownie layer, then dollop the remaining brownie batter on top.
  6. Drag a knife through the batter several times to create broad swirls. Do not swirl too much, or the chocolate and pumpkin layers may blend together.
  7. Bake for 35–42 minutes, until the edges are set and a toothpick inserted into the brownie portion comes out with moist crumbs. A little soft pumpkin filling on the toothpick is fine, but there should be no wet batter.
  8. Cool the brownies completely in the pan for at least 1 hour before cutting. For cleaner slices, refrigerate the cooled pan for 30–60 minutes, then lift the brownies out using the parchment overhang.

Notes

Use pure pumpkin purée rather than pumpkin pie filling. Fully softened cream cheese produces a smoother swirl, and slightly underbaking is the key to a chewy brownie texture.
