- Heat the oven to 350°F (175°C). Grease a 9 x 13-inch baking pan or line it with parchment, leaving a little overhang for easy lifting.
- Beat the softened butter, packed light brown sugar, and granulated sugar until light and creamy.
- Beat in the eggs one at a time, mixing after each addition, then blend in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually mix these dry ingredients into the butter mixture.
- Stir in the quick-cooking oats and white chocolate chips until they are evenly distributed throughout the dough.
- Press or spread the dough evenly into the prepared pan. Bake for 20–25 minutes, until the edges are lightly browned and the center looks set but still soft.
- Cool the bars completely in the pan for at least 30 minutes before cutting. Slice into about 24 bars and serve.
Notes
Do not overbake; the bars firm as they cool and remain chewier when the center is slightly soft at removal. Quick-cooking oats provide the classic texture, while old-fashioned oats may be substituted for a more pronounced oat texture and slightly thicker bars.
