- Heat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk the flour, cocoa powder, baking soda, and salt together in a medium bowl.
- Beat the softened butter, granulated sugar, and brown sugar for 2–3 minutes, until light and creamy.
- Beat in the eggs one at a time, then mix in the vanilla and instant coffee or espresso powder.
- Gradually mix the dry ingredients into the butter mixture just until incorporated.
- Fold in the chocolate chips and toffee bits. Chill the dough for 20–30 minutes if thicker cookies are desired.
- Scoop rounded tablespoons or heaping 1 1/2-tablespoon portions onto prepared baking sheets, leaving about 2 inches between cookies.
- Bake for 10–12 minutes, until the edges look set while the centers remain slightly soft.
- Let the cookies rest on the baking sheet for 5 minutes, then transfer them to a wire rack to cool.
Notes
Do not overbake; the cookies finish setting on the hot baking sheet. Store cooled cookies in an airtight container. If the dough seems unusually stiff, 1 tablespoon of milk or brewed coffee may be added.
