Cookie Dough
  • 2 1/4 cups (281 g) All-purpose flour
  • 1 teaspoon Baking soda
  • 1 1/2 teaspoons Cornstarch
  • 1/2 teaspoon Fine salt
  • 3/4 cup (170 g) Unsalted butter, melted and slightly cooled
  • 3/4 cup (150 g) Packed light brown sugar
  • 1/2 cup (100 g) Granulated sugar
  • 1 Large egg
  • 1 Large egg yolk
  • 2 teaspoons Vanilla extract
Mix-Ins
  • 1 1/4 cups (225 g) Semi-sweet chocolate chips
  • 1/2 cup, optional Red and green chocolate candies, holiday M&M-style candies, or Christmas sprinkles

Method
 

Step-by-Step
  1. Whisk the flour, baking soda, cornstarch, and fine salt together in a medium bowl.
  2. In a separate large bowl, whisk the melted and slightly cooled butter with the packed brown sugar and granulated sugar until smooth.
  3. Whisk the egg, egg yolk, and vanilla extract into the butter mixture until fully combined.
  4. Add the dry ingredients to the wet ingredients and mix just until no dry flour remains. Do not overmix.
  5. Fold in the semi-sweet chocolate chips and the optional red-and-green candies or sprinkles.
  6. Cover the dough and refrigerate it for at least 1 hour.
  7. Heat the oven to 325°F (165°C) and line baking sheets with parchment paper.
  8. Portion the dough into balls using about 2 tablespoons for medium cookies, leaving approximately 2 inches between portions.
  9. Bake for 11 to 13 minutes, until the edges are lightly browned while the centers still look soft and slightly underdone.
  10. Cool the cookies on the baking sheet for 5 to 10 minutes, then transfer them to a wire rack.

Notes

Chill the dough thoroughly for thicker, chewier cookies. Do not overbake; the soft centers finish setting as the cookies cool. For a stronger Christmas appearance, press extra red and green candies or chocolate chips onto the tops immediately after baking.
