- Whisk the flour, baking soda, cornstarch, and fine salt together in a medium bowl.
- In a separate large bowl, whisk the melted and slightly cooled butter with the packed brown sugar and granulated sugar until smooth.
- Whisk the egg, egg yolk, and vanilla extract into the butter mixture until fully combined.
- Add the dry ingredients to the wet ingredients and mix just until no dry flour remains. Do not overmix.
- Fold in the semi-sweet chocolate chips and the optional red-and-green candies or sprinkles.
- Cover the dough and refrigerate it for at least 1 hour.
- Heat the oven to 325°F (165°C) and line baking sheets with parchment paper.
- Portion the dough into balls using about 2 tablespoons for medium cookies, leaving approximately 2 inches between portions.
- Bake for 11 to 13 minutes, until the edges are lightly browned while the centers still look soft and slightly underdone.
- Cool the cookies on the baking sheet for 5 to 10 minutes, then transfer them to a wire rack.
Notes
Chill the dough thoroughly for thicker, chewier cookies. Do not overbake; the soft centers finish setting as the cookies cool. For a stronger Christmas appearance, press extra red and green candies or chocolate chips onto the tops immediately after baking.
