Chewy Cadbury Mini Egg Chocolate Chip Cookies

Thick, chewy chocolate chip cookies packed with chopped Cadbury Mini Eggs and finished with extra candy pieces on top. This recipe makes approximately 18–20 cookies.

Ingredients
  

Cookie Dough
  • 125 g Unsalted butter, softened
  • 100 g Light brown soft sugar
  • 100 g Caster sugar
  • 1 large Large egg, about M/L, beaten
  • 1 teaspoon Vanilla extract
  • 250 g Plain/all-purpose flour
  • 1 teaspoon Bicarbonate of soda/baking soda
  • 1/2 teaspoon Fine salt
Mix-ins
  • 200 g Cadbury Mini Eggs, roughly chopped
  • 100 g Milk or semi-sweet chocolate chips

Method
 

Step-by-Step
  1. Line two baking sheets with parchment paper. Place the Mini Eggs in a sealed bag and crush them gently with a rolling pin, leaving a mixture of small pieces and larger chunks; reserve a portion for topping.
  2. Beat the softened butter, light brown sugar, and caster sugar together until smooth, creamy, and evenly combined.
  3. Mix in the beaten egg and vanilla extract until incorporated. Sift in the flour and bicarbonate of soda, add the fine salt, and mix only until a dough forms.
  4. Fold in the chocolate chips and most of the chopped Mini Eggs, taking care not to overmix the dough. Divide it into approximately 18–20 portions and roll each portion into a ball.
  5. Place the dough balls well apart on the prepared baking sheets. Chill the shaped dough for approximately 30 minutes to help reduce spreading and improve chewiness.
  6. Preheat the oven to 180°C conventional, 160°C fan, or 350°F. Bake the chilled cookies for 10–12 minutes, until the edges are lightly golden while the centers remain soft and slightly underbaked.
  7. Immediately press reserved Mini Egg pieces and a few chocolate chips into each warm cookie. Leave the cookies on the baking sheet for 10–15 minutes before transferring them to a cooling rack.

Notes

Do not wait for the centers to look fully set. For thicker cookies, chill the shaped dough for 45–60 minutes, especially when the butter is very soft or the kitchen is warm. Store cooled cookies in an airtight container.
