Cheesy Shrimp Scampi Dip

A hot baked seafood dip combining tender chopped shrimp, garlic, white wine, lemon, cream cheese, Parmesan, and mozzarella. It is creamy, savory, and ready to share in about 35 to 40 minutes.

Ingredients
  

Shrimp Scampi Base
  • 1 tablespoon Unsalted butter
  • 1 tablespoon Extra-virgin olive oil
  • 1 pound Raw medium or large shrimp, peeled, deveined, and finely chopped
  • 3-4 cloves Garlic, minced
  • 1/4 cup Dry white wine
Creamy Dip
  • 8 ounces Cream cheese, softened
  • 1/2 cup Mayonnaise or sour cream
  • 1/2 cup Finely grated Parmesan cheese
  • 1/2 cup Shredded mozzarella cheese
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Finely grated lemon zest
  • 2 tablespoons Fresh parsley, chopped
Seasoning
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
  • 1 pinch Red-pepper flakes

Method
 

Step-by-Step
  1. Heat the oven to 375°F and lightly grease a small 1- to 1 1/2-quart baking dish.
  2. Heat the butter and olive oil in a skillet over medium heat. Add the chopped shrimp with a light seasoning of salt and pepper, then cook for about 2 minutes, just until the shrimp begin turning pink.
  3. Add the minced garlic and cook for 30 to 60 seconds, stirring constantly. Pour in the dry white wine and simmer for 1 to 2 minutes until slightly reduced, keeping the shrimp a little undercooked so they can finish in the oven.
  4. Reduce the heat to low and stir in the softened cream cheese, mayonnaise or sour cream, Parmesan, lemon juice, optional lemon zest, parsley, and optional red-pepper flakes. Mix until the ingredients are well combined.
  5. Transfer the mixture to the prepared baking dish and smooth the top. Sprinkle with the mozzarella and any extra Parmesan you would like to use.
  6. Bake for 18 to 22 minutes, until the dip is hot, bubbling, and lightly browned. For a more deeply browned cheese topping, broil for 1 to 2 minutes at the end while watching closely.
  7. Let the dip rest for about 5 minutes before serving. Garnish with additional parsley and serve hot with toasted baguette slices, crackers, pita chips, or sturdy vegetables.

Notes

Pat the shrimp dry and do not fully cook them in the skillet, since they will continue cooking in the oven. Softened cream cheese prevents lumps. Fresh garlic, dry white wine, fresh lemon, lemon zest, and freshly grated Parmesan provide the strongest scampi flavor. Store leftovers covered in the refrigerator and reheat gently until hot.
