Cheesy Ranch Chicken Enchiladas

Creamy shredded chicken, ranch seasoning, green chiles, and cheddar are rolled into flour tortillas, covered with green enchilada sauce, and baked beneath a bubbling blanket of cheese.

  • 8 oz Cream cheese, softened
  • 1 packet, about 1 oz Dry ranch dressing seasoning
  • 1 cup, divided Shredded cheddar cheese
  • 1 4 oz can, undrained Diced green chiles
  • 8 8-inch tortillas Medium flour tortillas
  • 1 10 oz can Green enchilada sauce
  • 1 1/2 cups Mexican-blend cheese or Monterey Jack
Optional Toppings
  • As desired Chopped green onions, cilantro, sliced jalapeños, or sour cream

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and lightly grease a 9-by-13-inch baking dish.
  2. Mix the shredded chicken, softened cream cheese, ranch seasoning, undrained green chiles, and 1/2 cup of the shredded cheddar in a large bowl until evenly combined.
  3. Spread a small amount of green enchilada sauce across the bottom of the prepared baking dish.
  4. Warm the tortillas briefly in the microwave under a damp paper towel. Spoon roughly 1/2 cup of filling down the center of each tortilla, roll tightly, and arrange each one seam-side down in the dish.
  5. Pour the remaining enchilada sauce over the rolled tortillas. Sprinkle the remaining cheddar and the Mexican-blend cheese or Monterey Jack evenly over the top.
  6. Cover the dish with foil and bake for 20 minutes. Remove the foil and continue baking for 5–10 minutes, until the cheese is fully melted and the edges are bubbling.
  7. Let the enchiladas rest for about 5 minutes before serving. Add green onions, cilantro, jalapeños, or sour cream as desired.

Notes

Rotisserie chicken works well, but choose chicken that is not heavily seasoned or salty because the ranch packet and cheeses already provide substantial seasoning. Store leftovers covered in the refrigerator and reheat gently until hot.
