Cheesy Hatch Green Chile Dip

A creamy, cheesy baked dip loaded with roasted Hatch green chiles, garlic, cumin, cheddar, and Monterey Jack. It serves 6–8 people and is ready in about 40–45 minutes when using prepared roasted chiles.

  • 8 ounces Cream cheese, softened
  • 1 cup Sour cream
  • 1/2 cup Mayonnaise
  • 1 1/2 cups Roasted Hatch green chiles, peeled, seeded, and chopped
  • 1 cup Shredded sharp cheddar cheese
  • 1 cup Shredded Monterey Jack or pepper Jack cheese
Seasonings
  • 2 cloves Garlic cloves, finely minced
  • 1/2 teaspoon Ground cumin
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
Optional Additions
  • 2 tablespoons Finely chopped green onion or cilantro
  • 1-2 tablespoons Chopped jalapeño

Method
 

Step-by-Step
  1. If starting with fresh Hatch chiles, roast them under a broiler, over a gas flame, or on a grill until the skins are blistered and blackened on all sides. Place the hot chiles in a covered bowl or sealed bag for 10–15 minutes, then peel, stem, seed, and chop them while wearing gloves.
  2. Heat the oven to 375°F and grease an approximately 8 x 8-inch baking dish. Drain the chopped roasted chiles thoroughly so excess liquid does not make the dip thin or greasy.
  3. Beat the softened cream cheese with the sour cream and mayonnaise until mostly smooth. Stir in the chiles, garlic, cumin, salt, black pepper, optional jalapeño, and optional green onion or cilantro.
  4. Add about three-quarters of the shredded cheddar and Monterey Jack, stirring until evenly distributed. Spread the mixture into the prepared baking dish and sprinkle the remaining cheese over the top.
  5. Bake for 20–25 minutes, until the dip is hot, bubbling, and lightly browned. Broil for 1–2 minutes if you prefer a more deeply browned cheese topping, watching closely so it does not burn.
  6. Let the dip rest for 5 minutes before serving. This short rest allows the creamy mixture to thicken slightly while keeping the cheese warm and scoopable.

Notes

Hatch chile heat varies by batch, so taste the chopped chiles before mixing and adjust the jalapeño or pepper. Canned mild or hot green chiles may be substituted, but drain them well. Refrigerate leftovers and reheat gently until hot.
